We recently travelled overseas to Mexico and America. The most AWESOME holiday ever! We went because my husband was selected to compete in the ITU World championships for triathlon in Cozumel, Mexico. Since we were close, we thought why not pop over to America and see Las Vegas and Disneyland.
Since we have been together, we had always planned to get married in Vegas, so we found a chapel and (finally) got married. …..By Elvis…… In Vegas. I know…It was so much fun! We are not technically married in Australia, yet, but eventually we will get the paperwork done.
When travelling you probably don’t eat the foods you usually would at home. I know I don’t. I like to fully immerse myself in the cuisine of wherever I am, even if it’s just a road trip a few hours from home. For this reason, I like to carry some healthy snacks. I also have a fear that I will get hungry and have nothing to eat. Weird. I know. Any way, here are some snacks I like to take with me wherever I go.
These don’t need to be kept in the fridge and are nut free, so lunchbox friendly. I also try to start out with some fresh fruit and vegetables. Usually you can find somewhere to get an apple or a bag of carrots when you’re on an adventure.
Roasted Chickpeas – These are super easy and pretty versatile. You can eat them as a snack on their own or add them to a salad, pasta or rice dish. You could even add them into your smoothie bowl, depending the flavours you use to roast.
Snack Balls – Can’t get enough of these. You can put whatever you want in them and they are delicious. When I know we might need some for a car trip, I usually leave anything fresh out (banana, pumpkin, apple etc) and just use dried fruit, nuts and seeds. I usually add some greens powder into these just for an extra boost of goodness.
Buckwheat Crunch – This is from one of my favourite websites Wholefood Simply. It is super simple and delicious. You will love it. Click here for the recipe. Make sure you have a good look around while you’re there.
